Ceylon Cinnamon sticks (3 inch)
  True or Real cinnamon, using only the thin inner bark, has a finer, less dense and more crumbly texture, and is considered to be less strong than cassia. Cassia is generally a medium to light reddish brown, is hard and woody in texture, and is thicker (2-3 mm thick), as all of the layers of bark are used. The two barks when whole can be easily distinguished, and their microscopic characteristics are also quite distinct. Cinnamon sticks (or quills) have many thin layers and can easily be made into powder using a coffee or spice grinder whereas cassia sticks are much harder, made up of one thick layer, capable of damaging a spice or coffee grinder. It is a bit harder to tell powdered cinnamon from powdered cassia. When powdered bark is treated with tincture of iodine (a test for starch), little effect is visible in the case of pure cinnamon of good quality, but when cassia is present a deep-blue tint is produced, the intensity of the coloration depending on the proportion of cassia.

Dill Seed
  Dill (Anethum graveolens) is a short-lived annual herb. Its seeds, dill seed are used as a spice, and its fresh leaves, dill, and its dried leaves, dill weed, are used as herbs. In arabic(palestinian) dill seed is called ain jaradeh(means cricket eye) used as a spice in cold dishes like fattosh and pickles. In Lao cuisine and parts of northern Thailand and Vietnam dill is known in English as Laotian coriander and Lao cilantro. In the Lao language it is called Phak See and in Thai it is known as Phak Chee Lao. In Lao cuisine, the herb is typically used in mok pa (steamed fish in banana leaf) and several coconut milk-based curries that contain fish or prawns. Lao coriander is also an essential ingredient in Vietnamese dishes like chả cá and canh cá thì là. In Iran, dill is known as "Shevid" and is sometimes used with rice and called "Shevid-Polo". In India, Dill is known as 'Soya' [सोया] in Hindi.

  In English, Nigella sativa seed is variously called Black cumin, fennel flower, nutmeg flower, Roman coriander, black seed, black caraway, or black onion seed. Other names used, sometimes misleadingly, are onion seed and black sesame, both of which are similar-looking but unrelated. Black Peppercorns Tellicherry
  Tellicherry Black pepper is native to South India and is extensively cultivated there. Like all eastern spices, pepper was historically both a seasoning and a medicine. Long pepper, being stronger, was often the preferred medication, but both were used. Black peppercorns figure in remedies in Ayurveda, Siddha and Unani medicine in South Asia. The 5th century Syriac Book of Medicines prescribes pepper (or perhaps long pepper) for such illnesses as constipation, diarrhea, earache, gangrene, heart disease, hernia, hoarseness, indigestion, insect bites, insomnia, joint pain, liver problems, lung disease, oral abscesses, sunburn, tooth decay, and toothaches.

  Coriander (Coriandrum sativum), also commonly called cilantro in North America, is an annual herb in the family Apiaceae. Coriander is native to southwestern Asia west to north Africa.
