Red jalape�o smoked over a natural wood fire just until the chilies are dried are called Chipotle range from 5000-10,000 SHUs or medium hot. The peppers are allowed to stay on the plant until they turn deep red and begin to dry out. It takes about 10 pounds of jalapenos to make a pound of chipotle. They are then grounded in to the fine chipotle powder with an intense smoky aroma.
They are primarily known for Mexican dishes, BBQ chicken, potato salad, chipotle may for sandwich, dips and sauces.
