Green Peppercorns (Malabar) |

Piper Nigrum is a flowering vine in the family Pipperaceae, cultivated for its fruit, which is usually dried and used as a spice and seasoning. The same fruit is also used to produce white pepper, black pepper and green pepper.These different forms of pepper have their own taste. Pepper is native to South India with long history and is extensively cultivated there and elsewhere in tropical regions.
Green Peppercorns are the immature, fresh green berries of the pepper vine. These berries are plucked fresh from the vines and processed into various specialty products while retaining their natural green color and flavor.
India is one of the very few countries which produces and supply Freeze Dried Green Peppercorns, wherein even the natural form of the Green Peppercorns is retained. This is a specialty product which finds a wide application in instant soups and dry-meals on account of its special characteristics and subtle flavor. It is also used in the cheese industry and for preparation of gourmet products. By virtue of its reconstitution characteristics it is a favorite choice for housewives.
Green peppers available in market are produced by either freeze drying or dehydration. Freeze dried pepper keeps the taste and aroma of fresh peppercorns. However, freeze dried products are more expensive than dehydrated products.
